Turkey Stock

Turkey neck and giblets (not the liver)
Any trimmed pieces from the turkey
1 onion roughly cut or the top of a leek
1 carrot roughly cut
1 bay leaf
1/4 teaspoon peppercorns
Thyme sprigs
Sage
1 clove garlic smashed and peeled
Water

Place all ingredients in a pot and cover with water. Bring to a boil then reduce heat to a simmer. Cook uncovered for at least two hours but the longer the better. Strain using a fine mesh strainer or a strainer lined with cheesecloth or a clean kitchen towel. Place in refrigerator. Once chilled the fat will be on the surface and will be easy to skim off.
