Ingredients for the vegetable Relish:
1 Can of beans rinsed
Frozen corn (use empty bean can and fill once)
1 tomato chopped
1 pepper chopped
¼ of a red onion diced small
¼ cup cilantro chopped
1 tsp cumin
¼ tsp chipotle powder
Salt and pepper to taste
Low fat shredded cheese
Whole wheat or multigrain tortillas
Combine all ingredients for the relish in a bowl and toss to combine.
Heat a skillet over medium heat. Use one tortilla shell on the bottom, layer with ½ cup of relish and ¼ of cheese. Place another tortilla shell on top and place in hot skillet. Cook for about 1-2 minutes until the bottom tortilla is browned then flip over and cook on other side until brown and cheese is melted about 1-2 minutes longer.
Serve with salsa and low fat sour cream or yogurt.
