Vegetable Quinoa Salad

Ingredients:
1 cup of uncooked Quinoa
1 Can of beans rinsed
Frozen corn (use empty bean can and fill once)
1 tomato chopped
1 pepper chopped
¼ of a red onion diced small
¼ cup cilantro chopped
1 tsp cumin
¼ tsp chipotle powder
1 Tablespoon olive oil
1 Tablespoon vinegar (apple cider)
Salt and pepper to taste

Rinse Quinoa well and bring it to a boil with 2 cups of water. Once boiling reduce the heat to a simmer and cook for about 15 minutes until spirals appear and all of the water is gone.
Combine all ingredients in a large bowl and toss to combine. Serve hot or cold.
